A gorgeous, smooth, zucchini soup, with quark - 100% original recipe by Fusion.mom

Ingredients

  • 1 Large red onion (chopped)
  • 3-5 cloves garlic (chopped)
  • 3 Medium green zucchini (sliced, or cut in large chunks)
  • 1 tablespoon mild yellow curry powder (bought, or you could make your own out of ground cumin, ground coriander, ground turmeric, crushed red pepper flakes, mustard seeds, and ground ginger)
  • 3 cups chicken stock
  • 200g quark (that's German for fresh cheese)
  • 1 sprinkle salt (to taste)
  • 2 drizzle extra virgin olive oil
  • 1 teaspoon herbs de Provence (please, not heaped - that would be too strong)

Directions

Step 1
In a medium pot fry onions and garlic until golden brown. Sprinkle with mild yellow curry powder, and fry for about half a minute.
Step 2
Add chicken stock and zucchini, and bring to boil. Cook on medium heat for 15 minutes, lid on.

Step 3
Remove from heat, then add the quark. Season to taste with salt and herbs de Provence.
Add some quark to your zucchini soup.
Step 4
Using a food processor, purée till smooth (30 seconds).

Garnish with fresh parsley and serve hot.

Note

You could boost the flavors with ground chilli peppers. But beware, curry is already spicy. More spices might ruin your dish.
