Red Cabbage, or purple cabbage, as it is also known, is a wonderful vegetable, full of vitamin C, and rich in vitamin A (ten times more than green cabbage). In Garden Super Hero Tales (Volume 1), Young Red Cabbage is one of the 10 delicious vegetables recommended for a healthy diet.

Red Cabbage Slaw

Take a small red cabbage, 2 carrots, 1 apple, 2-3 Mandarin oranges, olive oil, salt and pepper, and lemon juice. Grade the apple and carrots finely, then shred the cabbage as thinly as possible (or cut it julienne). Mix all the vegetables and apple in a large bowl, season with olive oil, lemon juice, and salt and pepper to your own taste. Now mix in Mandarin orange slices. Ready.

What I really love about this slaw is that is approved by Paul-Jules, the little hero of Garden Super Hero Tales, a tiny chef himself, who knows good food.
