Fun Ice Cream Recipes for Kids

Anyone can go and buy ice cream sundaes or sandwiches, but where is the fun in that? Making these concoctions is where all the excitement is! You can either make these recipes alone and surprise your children with them, or you can get them involved to help you! You can also make your own homemade ice cream for any of these recipes as well, if you are feeling a little extra ambitions.

Ice Cream Pizza Cookie

  • 1 quart of ice-cream, slightly softened
  • 1 cup of flour
  • 1 cup of quick cooking oats
  • ¾ cup of firmly packed brown sugar
  • ½ cup of butter, softened
  • ½ teaspoon of vanilla
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt

Heat oven to 375. In a large bowl, combine butter, brown sugar, egg and vanilla on medium speed until creamy. Reduce to low speed and add oats, flour, salt and baking soda. Once evenly combined, spread on ungreased 12-inch pizza pan.

Bake for approximately 10 minutes or until a light golden brown and allow cooling completely. Once cool, spread ice-cream over the cookie, so it is even like a pie. Freeze one to two hours and decorate witih toppings of your choice. A few recommendations include fudge or strawberry sauce, caramel, chocolate pieces, smashed up cookies, sprinkles, gummy worms, etc. Cut into wedges and serve.

Ice Cream Chocolate Wafer Sandwiches

  • 1 box chocolate wafer cookies
  • 1 quart softened ice cream
  • Chocolate, butterscotch or peanut butter chips, M&Ms, crushed nuts, coconut, sprinkles and any other topping you want

Place 15 chocolate wafers on a cookie sheet witih the flat side up. Put one scoop of ice cream on each wafer and create a sandwich by adding another wafer on top. Very gently push the top wafer down to spread the ice cream to the edges. Freeze for about an hour and then roll the edges in your choice of topping. Cover and keep frozen until ready to serve. Alternatively, you can replace the chocolate wafers for any type of cookies you prefer.

Sand Bucket Sundaes

  • 2 small play pails or buckets (2 cup size)
  • 4 cups caramel praline ice cream
  • ½ cup caramel or butterscotch topping
  • ½ cup graham cracker crumbs
  • Sea-shaped gummy candy

In each bucket, create layers of ice cream, topping and graham crackers over and over until the bucket is full. Decorate with the candies and keep frozen until ready to use.

Ice Cream Rice Krispies Treats

  • 1 box Rice Krispies, plus ingredients listed on box to make marshmallow treats
  • 2 cups ice-cream
  • Frosting
  • Sprinkles

Follow the directions on the box to make Rice Krispies treats with cereal, margarine and marshmallows. Butter a spatula and use it to press the treats into a glass 9” x 13” dish. Allow to cool and cut into 12 treats.

Cut each treat horizontally in half. Using your thumb, create a well in the middle by pressing down with your thumb. Add a scoop of ice-cream to the center and put the two sides of the treat back together. Freeze and then top with frosting and decorations.

Ice Cream Apple Dip

  • 2 Granny Smith apples
  • 4oz softened cream cheese
  • ½ cup peanut butter ice cream or vanilla ice-cream blended with peanut butter.

Slice apples and set aside. Combine the ice-cream and cream cheese using a whip or a wooden spoon until smooth. Place the mixture in a bowl and serve immediately with the apples on the side. This is a creative way to make sure children are getting some fruit in their diet as well.
