Beetroot, Chickpeas and Walnut Hummus

Soon, a new volume of the Garden Super Hero Tales will be released, where Stainy Beetroot becomes one of the main 10 characters. Among the recipes there, you will also find a better version of my beetroot, chickpeas and walnut hummus.

This is a very easy recipe: you will need two beetroots (boiled); some tinned chickpeas (about 500 grams); a handfull of walnuts; salt and pepper to taste; fresh oregano; a drizzle of olive oil; juice from a lemon; and 3-4 garlic cloves. Next, purée everything into a food processor, and set in the fridge for 20-30 minutes, to allow the flavors to blend.In the image above, the hummus is served with oven-roasted scorzonera (black salsify).
