Easy-Peasy Eggplant-Zucchini Snack

Do you want a recipe so easy that even a 4 year old can cook it? This is one of our household’s Summer favorites, and easy enough to be cooked entirely by a child. It is full of vitamins and nutrients, delicious and fun. In fact, we serve it at grill parties as an appetizer all the time.

Above, an Eggplant-Zucchini snack from my husband’s birthday grill party this year. In the center, one of my “secret” eggplant recipes, a superb fried eggplant with garlic-tomato sauce I learned from my mother and my grandmother.

For this recipe you need 5 Konasu baby eggplants, and 10 round slices of zucchini. Preheat the oven at 220°C.

Slice the baby eggplants in the middle, to get 10 halves. On a flat baking tray, place baking paper, and the sliced zucchini and baby eggplants on top. Season each carefully with olive oil, herbs de Provence, and salt. Add a lime, halved, on the tray, and several garlic cloves, unpeeled.

Place the tray on the middle rack in the oven, and let roast for about 20-25 minutes, or a bit longer, if you enjoy veggies well roasted. When they reach the desired roasting level, take them out, and plate one half of baby eggplant on one slice of zucchini, as you see in the picture below.

That’s it: easy peasy. Your kids will love cooking this, and eating the baby eggplant, and your guests will go “wow.”

Health benefits: eggplants contain iron, calcium and other minerals, essential phyto nutrients, which improve blood circulation and nourish the brain (in the skin), fiber, and low soluble carbohydrate content. Eggplants lower ‘bad’ cholesterol, and the best way to rip off this benefit is to bake them as I mentioned above. Eggplants help your heart too, as they contain Vitamin K and bioflavonoids, which control high blood pressure.

Dietary fiber in zucchini helps lower cholesterol too, as well as promotes healthy and regular bowel movements, so here are other benefits of this easy snack. Vitamins C and A are anti-inflammatory. A cup serving of zucchini contains over 10% of the RDA of magnesium, a mineral proven to reduce the risk of heart attack and stroke, while the manganese helps the body metabolize protein and carbohydrates, and more.

As you see, sometimes, the easiest things to cook, are among the healthiest.
