Curry Chicken with Creamed Butter Beans

Ingredients

  • 2 chicken breasts (sliced lengthwise)
  • 2 tablespoons CretaVita olive oil
  • 1 Large onion (chopped)
  • 2 carrots (diced)
  • 1 can butter beans (this recipe uses Baktat Riesenbohnen 800 g)
  • water or vegetable stock (enough to cover the ingredients about 2 cm/ 1 inch)
  • 1 heaped teaspoon curry powder
  • 1 heaped teaspoon dried garden herbs (this recipe uses my own mix of herbs de Provence)
  • pinch of salt and pepper (to taste)

Directions

Step 1
Heat the oil in large saucepan, brown the sliced chicken breasts over medium heat, on both sides, then remove and set aside.
Step 2
Add the onions and sauté for 8 minutes, until they soften. Add the carrots, curry powder and the herbs, and stir for 1-2 mins to toast the spices.
Step 3
Pour in the butter beans, add the browned chicken, and cover everything with water (about 2 cm, or 1 inch).
Step 4
Simmer for 30 minutes, then take out the chicken, and puree the butter beans with an immersion blender till creamy but still has some chunks.
Step 5
Season with salt and pepper, and stir well. Plate your dish: creamed butter beans first, chicken on top, and something green (dill or parsley) to decorate.
