Bell Peppers with Rice and Wild Mushrooms

This is a recipe “on demand” – hubby is tired of meat, so I am trying something new: bell peppers stuffed with rice and wild mushrooms, served with a side of vegan mash potatoes.

A child-friendly recipe (believe it or not, my little boy loves the rice and wild mushroom mix, and especially the mash…) this is perfect for fasting, vegan or vegetarian diets. Just prepare your mash potatoes with something like margarine.

Ingredients

  • 7 Bell peppers (medium size)
  • 200g rice (boil before use)
  • 450g wild mushrooms (canned)
  • 200 ml vegetable juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 teaspoon Vegeta Gourmet Seasoning
  • 1 bunch fresh herbs (finely chopped: oregano, basil, rosemary)
  • 1 clove garlic (finely diced)
  • 1 Small onion (finely diced)

Directions

Step 1
Into a thick-bottomed, non-stick pan, with a drizzle of olive oil, put onions, seasoned with salt, pepper and Vegeta, and cook slowly, till the onions are soft and golden.
Step 2
Add canned wild mushrooms (I used Valenzi Mischpilze hell), and fresh herbs, and cook for another 4-5 minutes. Add boiled rice and cook for two more minutes, then let rest for about ten minutes.
Step 3
Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers into a deep thick-bottomed pan.
Step 4
Spoon an equal amount of the rice-wild mushrooms mixture into each hollowed pepper.
Step 5
Add vegetable juice (or stock) to cover the bell peppers, and bring to boil on the stove.
Step 6
Bake 1 hour in the preheated oven (180°C) basting with the sauce every 15 minutes. Make sure the bell peppers are nice and tender before you remove from oven.
Step 7
Serve with mash potatoes, pasta, Couscous or similar variations. For a 100% vegetarian diet, prepare your mash potatoes with water and vegan margarine.
