This is a recipe “on demand” – hubby is tired of meat, so I am trying something new: bell peppers stuffed with rice and wild mushrooms, served with a side of vegan mash potatoes.

A child-friendly recipe (believe it or not, my little boy loves the rice and wild mushroom mix, and especially the mash…) this is perfect for fasting, vegan or vegetarian diets. Just prepare your mash potatoes with something like margarine.

Ingredients
- 7 Bell peppers (medium size)
- 200g rice (boil before use)
- 450g wild mushrooms (canned)
- 200 ml vegetable juice
- 1 pinch salt
- 1 pinch black pepper
- 1 teaspoon Vegeta Gourmet Seasoning
- 1 bunch fresh herbs (finely chopped: oregano, basil, rosemary)
- 1 clove garlic (finely diced)
- 1 small onion (finely diced)
